Vocabulary: vegetables are good for you

A vegetable is a plant, or any part of a plant that is consumed by human-beings as food (it excludes ‘plant food' such as fruits, nuts, cereal grains and pulses – lentils, chickpeas, etc.)

There were ‘domestic' vegetables.  Then 'exotic' ones were imported by men (potatoes were introduced (for people) in the 17th century). Nowadays, most vegetables are grown all over the world as climate permits and crops may be cultivated in protected environments in less suitable locations. (in the open air, or in greenhouses)

They may be eaten either raw or cooked and play an important role in human nutrition. Many governments encourage their citizens to consume plenty of fruit and vegetables (5 or more portions a day being recommended.)

Some vegetables are eaten raw: here, their names will be written in green X. Others are eaten raw and/or cooked XX whereas a third category are normally always cooked before eaten XXX.

This classification is only an indicator ; yet, everybody is free to follow new trends and regional or personal "oddities"   ! You're not at all forbidden to eat raw leeks, or cooked radishes... What's essential, for our health, is to EAT VEGETABLES !

Radishes X (XX? )       Horseradish X  Beetroot XXX

Shallot XX                Garlic XX                Parsley XX

Artichokes XX  French beans/green beans XXX                   Mushrooms XX

Cabbage XXX          Cauliflower XX (X ??)              Brussels sprouts XXX

Eggplant  XXX        Courgette/Zucchini XXX                  Spinach XXX (X ??)

Broccoli XXX              a  Turnip XXX                 Pumpkins XXX

Whether they are eaten raw or cooked is only a matter of taste, and as you know, " to each his own" (or with a possible slightly derogatory implication) "there's no accounting for taste"!

Let's not forget that remarkable invention: frozen or deep-frozen vegetables!

Here are, anyway, the vegetables you have to know if you want to have a healthy and balanced diet while staying in Anglo-Saxon countries!

Well!  It looks as if you knew all the important vegetables!   You must be ready for the test, then ! Good luck!
