these are the different steps you should take to avoid this common mistake:
1) Louise could see peacocks.
2) I could see peacocks.
3) Louise and I could see peacocks.
You CANNOT say:
("I" is a subject pronoun, "me" cannot be the subject of a verb)

"Louise and me" might be sometimes said, but it's not correct.
And then there are those who overcorrect, and think that "between you and I" is correct. (It's not.)

The use of "ME" or "I" isn't so easy for most of the English learners.
Using ME as a subject is not formal but is said, as Travis pointed out.
I just want to go a bit further in this question.
When I = moi.
- I myself / for my part / for one believe that she’s wrong. (Moi, je crois qu’elle a tort.)
- I, too, have been to London. (Moi aussi je suis allée à Londres.)
- It was I who did it. (And not "me"). (C’est moi qui l’ai fait.)
We can use both "I" and "me" in some sentences, but "I" should be followed by an auxiliary to make sense. ( I + auxiliary is more formal.)
Ex:
- J’ai faim - Moi aussi. ==> I'm hungry - me too / so am I.
- Qui veut venir avec moi?-Moi! ==> Who wants to come with me?-Me! / I do!
- Qui a fait ça? – Moi! ==> Who did this? – Me, not me / I did, I didn’t!
- Elle est plus âgée que moi. ==> She’s older than me / than I am;
- Il travaille mieux que moi. ==> He works better than me / than I do.
Also, like "between you and me" [between us (and not "we")]
- Who’s there? It’s me. (Qui est là ? – C’est moi.)

I is a subject pronoun. Me is an object pronoun (direct object, indirect object, or the object of a preposition).
Generally, I = je and me = me or moi
I will go. I have been called. She talks to me. He hit me. They did it for me. She went after me.
Even native English speakers have trouble choosing the right one when there is more than one person in the phrase (like in "between you and me"). Taking out the other person can make it more clear (between...me: "me" is the object of the preposition "between").
