    Hello!

You need to check the verb tenses in each of your suggestions, as neither is correct.
I've been writing a letter to my dad while my dad has called me.
I am writing a letter to my dad while my dad has called me.

Are you trying to say that
-- you were writing a letter while your dad was calling you (i.e. You were writing and he was calling at the same time) OR
-- you were writing a letter when your dad called you (and then you stopped writing)
