Both are acceptable; there may be a slight difference depending on the context.

HelloIn American English, we would say "While supplies last" or "Limited to stock on hand".

Hello peizhen,
Notrepere already explained what we usually say in the US. In addition, the word stock, used in this sense, is a noncount noun. Therefore, it will never be plural. When this word is plural, it has a different meaning.
