Hello,
could you please help me with this question ?
we know we use ''it'' instead of '' this or that'' in the question tag but if we have this question tag '' this man is very tall , ....?
can we also use here ''it'' or use ''he'' instead of '' this man ''?

Hello,
In your sentence, 'this' is a determiner and not a pronoun. Your question tag must refer to the noun.
So the correct sentence would be "This man is tall, isn't he?"
If you use 'this' as a pronoun, then you must use 'it' for the question tag.
E.g. This is scary, isn't it?
