1. Prepare the potatoes :
Peel the potatoes and cut into streaps. Soak them in cold water for 30 minutes to remove the starch. Drain and dry thorougly.
2. Prepare the pastry : In a bowl, mix the flour, cornflour, baking ponder, dark beer and spakling water with a fork. To make a thick, smooth dough, gradually add the cold beer and sparkling water (55 g flour, 55 g maïzena, 6 g chemical yeast, 15 cl brown beer, 15 cl sparkling water ).

4. To give your fish a more flavoursome taste, marinade it with lemon juice and fresh herbs for 15 minutes before dipping it in the bater.
5. Fry the fish : Dip the fish fillets in the batter, then plunge them into the hot oil. Fry for 4 to 5 minutes, until golden and cripsy. Drain on kitchen paper.
6. Salt and flaur your fish filets and set aside.
7. Fry the potatoes : Heat the oil in a deep fryer or saucepan to 180 °C. Add the potatoes and fry until golden and crispy. Drain on absorbant paper.
