Foie Gras has origins in Egypt. The Egyptians observed the reserves of fat produced the geese, before undertaking seasonal migration, and had the the idea to domesticate and to induce the natural over-feeding year round. The practice moved to the Romans. The Romans, force-fed them figs and it is the word 'ficandum'; or fig is at the origin of the word 'foie'. For long time, the Jews of central Europe were famous as the only ones know the secrecies of the good foie gras. But it was as a French speciality it conquered the discerning palates of the world. As early the 18th century, Toulouse Strasbourg were rivals in earning the reputation the finest Foie Gras. Nevertheless was in Strasbourg in 1780, the reign of Louis XVI, that the Foie Gras Pâté was truly presented as to the world by J.P. Clause, gifted cook to governor of Alsace, the Marshall of Contades.
